When do allergies develop?

Dear Allergy Nurse
I am 36 years old and have never had an allergic reaction to peanuts or seafood (shellfish). I haven't eaten either in 2-3 years. Can an allergy to food develop if you haven't eaten that food for a certain amount of time, or can one assume that if you've eaten peanuts and shellfish many times without a reaction that an allergy won't develop even if you haven't eaten those foods in a while? -- Nancy, Pennsylvania

What causes allergies that cause severe reactions like being allergic to milk. Are you born with these or do they come upon you during your life? -- Evin, U.S.A.

You can become allergic to any food, medication, pollen, mold, environmental item, or contact allergen at any time during your life. However, a tendency to allergies is often inherited. If your parents or grandparents have asthma or allergies, your chance of developing allergies is increased.
